sail in the crystal clear waters of the caribbean





Start your day with a great cup of coffee from freshly ground beans worthy of Bruce's home town, Seattle.  Settle into the cockpit and enjoy another gorgeous morning in paradise while Laura serves fresh fruit parfait, banana  pancakes, French toast, bacon with egg and Canadian cheddar on toasted Ciabatta bread, veggie frittata with delicate slices of Serrano ham, or a massive omelet with roasted potatoes.




After a morning sail to a new location and a refreshing snorkel/swim, lunch is ready!  What will it be today?  Hearty Roast Beef sandwiches with a spicy horseradish dressing and Laura's divine potato salad?  Salmon melts with a side salad of organic greens?  How about grilled Margarita Shrimp, marinated in tequila and fresh lime juice?  Does a warm lentil salad with Dijon vinaigrette over a bed of fresh spinach appeal?  Do you think you'll have room for a cookie or a ration of chocolate?



After lunch we'll sail to the next anchorage with an opportunity to swim, snorkel, kayak, or explore ashore.  Bruce will be at the bar to make your favorite cocktail or his favorite rum punch.  Enjoy the sunset with a libation and some brie with our special pineapple hot sauce, or smoked trout, or (everyone's favorite) mahi fritters.

 




It’s early evening and the coki frogs are serenading the anchorage.  The night is Caribbean cool.  The wine is chilled. Enjoy beef tenderloin with a killer Madeira/shallot reduction (if you can't guess the 'secret' ingredient, Laura will be happy to share the recipe).  Or Jambalaya loaded with shrimp, chicken and andouie sausage.  Laura's 
favorite is pasta with lots of roasted garlic, toasted pine nuts, sun-dried tomato, fresh basil, spinach and prosciutto served with bruchetta.

The table is cleared.   Settle back with your glass of wine or an after-dinner cordial.  Everyone is stuffed but there’s always room for a slice of Key Lime Pie, a bit of Chocolate Mousse, Flan, or Molten Lava Cake.   The stars are out in a brilliant array that can only be experienced from boat.
